Vegan Pulled Mushroom Shoarma
Experience a burst of flavour with our new recipe: vegan pulled mushroom shoarma – a delicious and easy-to-make dish that’s perfect for a quick and satisfying meal! 💛
Ingredients:
• 1 Lebanese bread
• 1 handful iceberg lettuce
• A bunch of radishes
• 10 cherry tomatoes
• Mint
• 1 red onion
• 300 gr oyster mushrooms
For the marinade:
• 100 gr shoarma spices
• 2 tbsp oil
• 3 tbsp soy sauce
For the yoghurt dip:
• 100 gr vegan yogurt
• 2 cloves garlic
• 20 gr sriracha
• Salt
Preparation:
1. Preheat the oven to 175 degrees Celsius.
2. Tear the oyster mushrooms into strips and put them in a large bowl.
3. Add the ingredients for the marinade to the bowl and mix them together with your hands.
4. Line a baking tray with parchment paper and spread the marinated oyster mushrooms on the tray.
5. Bake in the preheated oven for 20-25 minutes until golden brown and crispy.
6. Meanwhile, make the yogurt dip. For this, put all the ingredients in a small bowl and mix them together. Let stand for a few minutes to allow the flavours to melt.
7. Finely chop the red onion, radishes, lettuce, cherry tomatoes, and mint.
8. Top the Lebanese bread with lettuce and pulled mushrooms.
9. Garnish with the yogurt dip and fresh vegetables and mint.
